Vegetable Pulao + Beans Stir Fry + Chutney + Pakora

Vegetable Pulao
Ingredients

1 cup basmati rice (soaked for 20 minutes)

2 cups water
-
1 tablespoon ghee or oil
-
1 bay leaf
-
1 small cinnamon stick
-
2 cloves
-
1 green cardamom
-
1 teaspoon cumin seeds
-
1 onion (sliced)
-
1 cup mixed vegetables (carrot, peas, beans, potato)

Salt as per taste

½ teaspoon garam masala (optional)
Method

Heat ghee or oil in a cooker or pan.

Add whole spices and cumin seeds. Let them splutter.

Add sliced onions and sauté until light golden.

Add vegetables and cook for 2–3 minutes.

Add soaked rice and mix gently.

Add water and salt.
-
Cook until rice is fluffy and fully done.

Sprinkle garam masala and fluff gently before serving.
Beans Stir Fry (Simple & Healthy)
Ingredients

2 cups chopped French beans
-
1 tablespoon oil
-
½ teaspoon mustard seeds
-
1 small onion (finely chopped)
-
1 green chilli (optional)
-
Salt as per taste
-
2 tablespoons grated coconut (optional)
Method
-
Heat oil in a pan and add mustard seeds.

Add onion and sauté until soft.
-
Add chopped beans, salt, and chilli.
-
Cover and cook on low flame until beans are tender.
-
Add grated coconut and mix well.
-
Cook for another minute and serve.
Fresh Green Chutney
Ingredients

1 cup coriander leaves
-
8–10 mint leaves
-
1 green chilli
-
1 teaspoon lemon juice
-
Salt as per taste
-
Little water for blending
Method
Blend all ingredients into a smooth chutney. Adjust salt and lemon as per taste.
Crispy Pakora
Ingredients
-
1 cup gram flour (besan)
-
1 onion (sliced) or mixed vegetables
-
1 green chilli (optional)
-
½ teaspoon turmeric powder
-
½ teaspoon red chilli powder
-
Salt as per taste
-
Water (to make batter)
-
Oil for frying
Method
-
Mix besan, spices, vegetables, and salt.
-
Add water slowly to make thick batter.
-
Heat oil in a pan.
-
Drop small portions of batter into hot oil.
-
Fry until golden and crispy.
-
Remove and drain excess oil.
